Baked Teriyaki Sturgeon Steaks

Ingredients

* 1 sturgeon steak
* 1/2 cup. light soya sauce
* 1/3 c. chopped green onions
* 3 tbsp. demerara sugar
* 1 large finger ginger cut into chunks
* 1 clove garlic
* 1/4 c. white wine

Directions

Mix all ingrediants, except fish, to make sauce. Mash ginger and garlic and leave in sauce. Add enough water to sauce to cover fish. Marinate fish for 2 to 3 hours. Prepare a foil pouch for each fish steak. Put steak in pouch and cover with extra sauce. Seal and bake 450 F for 30-45 minutes. Open top and place under broiler for 2 minutes to brown.

Sturgeon With Ginger Sauce

Ingredients

* 1 tsp. grated fresh ginger
* 1 tbsp. fresh lemon juice
* 1 clove garlic crushed
* 2 tbsp. white sugar
* pinch of salt
* 3/4 c. water
* 2 tbsp. cornstarch
* 1 lb. sturgeon steaks

Directions

Combine ginger, lemon juice, garlic, sugar and salt in a small saucepan. Bring to boil. Cover, reduce heat and simmer for 10 minutes to blend flavors. Blend cornstarch with a couple tablespoons of water. Stir into the ginger mixture. Stir over medium heat for 3 minutes or until thickened and there is no taste of the cornstarch. Pour over cooked fish.

To cook steaks brush with melted butter and bake in 425 F oven on a baking sheet for 10 minutes pet inch of thickness.

Batter Fried Sturgeon

Ingredients

* 1 Sturgeon Filet (Cross cut into 1/2″ strips)
* 8 cups UNBLEACHED flour
* 2 Tsp. Salt
* 2 Tsp. Black Pepper
* 2 Tsp. Baking powder
* 4 Large Eggs
* 1 Qt. Skim milk
* 1 Qt. (Or more) Canola oil

Directions

Combine dry ingredients in large mixing bowl. Mix eggs and milk with 2 cups of the dry batter in separate large mixing bowl. (Should be the consistency of a very thin pancake batter.) Dip sturgeon strips in wet batter, then dry mix… Repeat this process to produce a thick, crunchy batter.

Cook to a light golden brown in hot oil. Serve with a good red or tartar sauce as a dip. Include oven browned or fried tater tots, and a tossed green salad for a well rounded meal.

Grilled Sturgeon with Roasted Garlic Cream Sauce

Ingredients

* 2 7-8 OZ. Sturgeon Filets
* Salt and pepper to taste
* 4 oz of whole butter – softened
* 2 Tbl. Roasted Garlic – chopped
* 1/2 cup of fish stock
* 1/3 cup of heavy cream
* 1 tbl. of fresh chopped parsley

Directions

Mix butter and roasted garlic together. Pat sturgeon fillets dry with a towel. Season with salt and pepper. Smear a thin coating of the butter mix on both sides of sturgeon-reserving about a tablespoon of butter.

Cook on a flat grill or in a pan on med heat–being sure not to burn the garlic–turning the fish once–cook about 8-10 minutes in a saute pan add the reserved butter and just bring to a sizzle. Add fish stock and simmer liqiud until reduced by 1/2. Add cream and simmer until thickened add parsley and pour sauce over fillets.

Saucy Mushroom Sturgeon

Ingredients

* 1 lb. sturgeon filets cut in half lengthwise & sliced
* 1 Cup red onion halved & sliced
* 1 Cup fresh shitake mushrooms stems removed halved & sliced
* 1 can Campbell’s Golden Mushroom with sliced mushrooms soup
* 1/4 Cup water
* 2 Tbsp. fresh parsley finely chopped
* 1 1/2 tsp. fresh dill finely chopped
* cooked instant brown rice for four

Directions

Heat a skillet on medium heat. Add 2 tsp. butter, onions, and shitake mushrooms. Cover and cook for a few minutes until softened. Remove onions and mushrooms to a bowl. Add 1 tsp. butter & 2 tsp. olive oil to pan. Add sturgeon slices and cook for 1 minute on each side.

Add back mushrooms and onions, golden mushroom soup, water, parsley and dill. Heat to bubbly, turn to low and simmer for a few minutes until heated through. Serve over brown rice. This is good with fresh or frozen green beans and toasted almonds.

Other Notes
You can substitute noodles for the instant brown rice if you don’t care for or don’t have brown rice.

Sturgeon Steak Poached In Beer

Ingredients

* 4 sturgeon steaks 3/4 inch think
* 1 c. water
* 1 c. beer
* 1 carrot sliced
* 1 onion sliced
* 1 stalk celery sliced
* 1 sprig parsley
* 4 peppercorns
* 3 cloves
* 1 bay leaf
* 1 1/2 tbsp. butter
* 1 tbsp flour
* 1/2 c milk
* 2 tbsp. grated parmesan cheese
* 1/4 c. chopped gruyere
* 1 egg yolk
* 1/8 c. whipping cream
* salt and pepper to taste

Directions

Set fish aside. Bring next 9 ingredients to a boil in a large skillet. Reduce heat, cover and simmer for 15 minutes. Arrange two of the steaks in the broth. Cover and simmer for about 10 minutes, turning once, until the fish flakes to the touch of a fork. Transfer to a greased shallow baking dish an repeat with the two remaining steaks. Boil the broth, uncover, until reduced to 1 c. Strain through severa thcknesses of cheesecloth. In a saucepan melt 1 tbsp. of butter. Add the flour and stir until blended. Bring the milk to a boil and then add all at once to the butter/flour mixture, stirring vigorously until the sauce is thickened and smooth. Stir in the strained broth and cheeses. Beat the egg yolk with a little of the warm sauce before adding to the saucepan to prevent curdling. Continue to cook the sauce over low heat, stirring until thick. Stir in the remaining butter and the cream. Season with salt and pepper. Pour the sauce over the fish and boil until lightly brown.
