Sauteed Perch with Jalapeno-Butter Sauce

Ingredients

* 2 tbsp. flour
* 2 tbsp. cornmeal
* 1/2 tsp. chili powder
* 1/4 tsp. salt
* 1/4 tsp. black pepper
* 4 perch fillets
* 1 tbsp. butter
* Jalapeno-Butter Sauce
* lime wedges
* 2 tbsp. butter
* 1 small jalapeno chile
* cored
* seeded & minced
* 1 shallot
* minced
* 1 tsp. minced fresh tarragon
* 1 to 2 tsp. fresh lime juice
* salt
* pepper.

Directions

On plate, stir together flour, cornmeal, chili powder, salt and pepper. Coat perch with flour mixture. Heat butter in 10-inch nonstick skillet. Add perch and cook over medium heat or until browned on both sides and white in the center, allowing 3 minutes per side.

JALAPENO-BUTTER SAUCE

Melt butter in small pan. Add chili and shallot sauteed of medium heat for 3 minutes or until shallot is tender. Add tarragon and 1 tsp. of lime juice. Taste. Season with salt and pepper. If sauce is slightly tart, add remaining 1 tsp. lime juice. Serve immediately.

Perch Chowder

Ingredients

* 4 slices bacon
* 1/2 cup chopped onion
* 1/2 cup diced carrots
* 1/2 cup chopped celery
* juice from half a lemon
* 1 pound perch
* 1 can cooked potatoes
* diced
* 1 cup water
* salt and pepper
* 1 cup milk
* 1 can creamed corn

Directions

Cook the bacon and reserve two tablespoons of bacon drippings. Place the drippings in a large pan that has a cover. Add onion, carrot, and celery to the pan and cook for about five minutes, stirring. Stir in the fish, potatoes, lemon juice, water, salt and pepper. Bring to a boil, then reduce heat and simmer, covered for about 10 minutes. Blend in the milk and the corn. Stir and heat – do not boil – until heated through. Sprinkle each serving with the crumbled bacon.

Cocktail Style Yellow Perch

Ingredients

* water
* salt
* 1/4 of a lemon
* sliced
* 1 pound of perch fillets
* cut into bite sized pieces
* seafood cocktail sauce

Directions

Boil water with salt and lemon added in a 3-quart pan. Reduce the heat to about medium and add the perch pieces. Cook for several minutes, until fish is opaque and beginning to curl up. Remove the fish and drop it into iced water. When fish has cooled completely, drain and serve with cocktail sauce as you would shrimp.

Ingredients

* 4 Perch Filets
* well cleaned
* 1/4 sitck butter
* 1 tsp Worchester Sauce
* Paprika to taste
* Lemon slices
* Salt and Pepper

Directions

Place perch individually on tin foil. Mix butter, Worchester sauce, in sautee pan. Melt butter. Baste each perch with mixture. Then sprinkle paprika on perch. Place lemon slices on fish and tightly wrap the tin foil. Place directly in the coals and cook for 12 minutes. Carefully remove and serve with parsley and au gratin potatoes.

Havlin’s Smoked Perch

Ingredients

* 4 perch filets
* Salt and Pepper
* 1/4 stick butter
* two lemons
* cherry wood chips

Directions

Build campfire. Place fish in rack and baste with butter and spices. Make sure wood chips are smoking into rack. Cook for 15-20 minutes. Serve with beans. This recipe is so good, it would make a rabbit hug a hound dog.

Parlak’s Perch Fillets Piccata

Ingredients

* 1 lb. perch fillets
* 1/3 cup flour
* 2 tsp. paprika
* salt and pepper to taste
* 1/3 cup milk
* 2 Tbsp. butter
* juice of 1 fresh lemon
* fresh parsley for garnish

Directions

Combine flour, salt and pepper in a shallow pie dish. Dip fillets in milk and then in flour mixture. Melt butter in skillet. Saute’ fish in butter, turn once. Remove to hot platter. Place fresh lemon juice in skillet and then pour over fillets. Garnish with fresh parsley.

Fried Perch

Ingredients

* Oven fry
* Veggie Oil
* eggs
* salt and pepper
* 2-4 freshly caught Perch
* butter

Directions

1. Line pan w/ butter
2. Cover Perch with Oven fry
3. Add salt and pepper to the perch
4. Put the veggie oil in the pan
5. Cook each side of perch about 5 min.

Perch cocktail

Ingredients

* perch fillets
* horseradish
* ketchup

Directions

Cut perch fillets into bite size pieces. Add to boiling water until done. Drain and chill in ice water. Drain and lay pieces over a bed of ice to serve. They make a great substitute for shrimp.

The cocktail sause can be purchased seperately or prepaired from a mixture of ketchup and horseradish (to taste).

Gramps Easy Fried White Perch

Ingredients

* 6 White Perch Filets Cleaned And Skinned
* 1 Egg
* 1 Cup Milk
* 3/4 Cup White Flour
* Butter
* Salt
* Pepper

Directions

# Mix egg and milk and dip thoroughly cleaned filets in mixture
# Shake off excess and coat lightly w/ flour
# Season both side to taste w/salt n’ pepper
# Heat butter in deep frying pan over medium high heat
# Add fish when pan is hot, before butter starts to burn. Cook till golden brown on both sides, don’t flip to soon.
# Enjoy.

Other Notes
I like it w/ good old mashed potatos and fresh steamed green beans.

Ingredients

* 1 lb. perch
* 2/3 cup cream of celery soup
* 3/4 cup sour cream
* 3/4 cup shredded cheddar cheese

Directions

Thaw and drain frozen fillets and arrange in a single layer in a 2-quart buttered, shallow baking dish. Combine sauce ingredients and heat until cheese melts. Spread over fillets and bake at 375 for 25 minutes.
