Grandma Sylfiel’s Corn Flake Crappie

Ingredients

* Fresh crappie fillets
* Corn Flakes
* Butter

Directions

1. Clean and dry as many Crappie fillets as you need.
2. Crush Corn Flakes inside a freezer bag to a fine consistency. (do not crush to powder)
3. Melt Butter (Margarine or any imitation will do)
4. Dip fillets in melted butter and coat with crushed Corn Flakes.
5. Arrange on foil lined baking sheet.
6. Cook at 350 degrees for 10 to 20 minutes.
7. Fillets are done when Corn Flakes begin to brown.
8. Salt & pepper to taste.

South of the Border Baked Crappie

Ingredients

* Fresh crappie fillets
* Medium Salsa (or your preference)
* Shredded cheddar or monterey jack cheese
* Chopped green onions

Directions

Line small baking pan with aluminum foil. Place fillets in pan and cover with salsa. Cover with foil and bake at 350 for approximately 15 minutes. Open foil and cover fillets with cheese and chopped green peppers. Return to oven and heat uncovered until cheese has melted.

Foil-Baked Crappie

Ingredients

* 2 pounds crappie fillets
* 3 tsp lemon juice
* 3 tb butter
* 1/2 tsp basil
* 1/2 tsp dill
* Salt and pepper

Directions

Rub fillets with butter and place on aluminum foil. Sprinkle lemon juice, basil, and dill onto fillets and add salt and pepper per your preference. Fold foil over fillets and tightly seal edges to enclose fillets in a “foil pocket”. Bake or grill for approximately 15 minutes or until fillets are white and flaky.

Southwest Crappie Grilled Fillets

Servings: 3-4

Ingredients

* 8 crappie fillets
* black pepper
* salt
* cajun seasoning
* 1 jalapeno pepper
* chunky salsa of your choice
* butter
* spanish rice
* corn

Directions

Season the crappie fillets with salt,pepper,cajun seasonings and a light coat of butter. Place the fillets on the grill and cook until done. ( about 10-15 minutes )

Prepare a healthy portion of spanish rice and mix in a can of whole kernal corn. Slice the jalapeno pepper and mix into the rice mixture.

Place a large scoop of chunky salsa onto the cooked fillet, add desired amount of cheese and allow to melt onto the salsa and fillet.

Place the fillet onto the bed of rice and corn mixture and season to taste with salt and pepper.

Ingredients

* 1.5 – 2 lb. crappie fillets
* mayonaise
* bread crumbs
* paprika
* salt
* pepper

Directions

Pat fillets dry with paper towel. Arrange evenly in baking dish or pan. Spread mayonaise on top of each fillet covering it completely yet lightly. Sprinkle a little bread crumbs on top of mayo-coated fillets as well as paprika, salt, and pepper. Cover with foil.

Crappie and Rice Cheddar Bake

Ingredients

* 8 Crappie Fillets
* White Rice
* Bread Crumbs
* Cheddar Cheese
* salt and pepper

Directions

Clean and prepare 8 Crappie Fillets, season with salt and pepper. Chop the fillets into bite size squres and place into an 8 inch baking dish. Layer The fillets with prepared white rice and shredded cheese. Top the dish with bread crumbs for a little crunch. Let the dish bake for 25-30 minutes at about 350 degrees

Other Notes

Serve with a nice glass of white whine or a glass of cranberry juices with a touch of burbon.

Pancake Ranch Crappie Fillets

Servings: 3-4

Ingredients

* 6 large crappie fillets
* cyan pepper
* black pepper
* corn meal
* ranch dressing
* pancake batter
* tobasco sauce
* corn meal

Directions

Clean and prepare 6 large crappie fillets.

1. inject the fillets with a marinade mix made up of cyan pepper,black pepper, and tobasco sauce.

2. prepare a bowl of pancake mix, whichever brand you prefer. Add in a good portion of ranch dressing to the pancake mix

3. Roll the fillets into the corn meal and seal in the pancake and ranch dressing mixture.

4. Drop the fillets into hot peanut oil around 350 degrees.

5. Cook until golden brown usually about 10-12 minutes the fish will float when done.

6. Top with ranch dressing

Other Notes

Serve with something cold to drink a nice glass of ice team with fresh lemon will do the trick

Grilled Southwest Crappie Fillets

Ingredients

* 8 crappie fillets
* black pepper
* salt
* cajun seasonings
* spanish rice
* corn
* jalapeno peppers
* chunky salsa of choice
* butter

Directions

Season 8 fillets with salt,pepper, and cajun seasonings. Lightly coat the fillet with melted butter so as not to stick to the grill.

While the Fish is grilling begin preparing spanish rice. Add 1 can of whole kernal corn and 1 finely chopped jalapeno pepper to the rice.

As the fillets are nearing completion cover with a large scoop of chunky salsa and shredded cheese of choice. Let the cheese melt completely.

Place the Grilled fillets onto a bed or rice and corn mixture and enjoy.
