Witresde’s Marinated Salmon Steaks

Ingredients

  • 8 oz salmon steaks 1 1/4 to 1 1/2 inches thick
  • 1/2 cup sliced green onions including tops
  • 1/2 cup dry white wine
  • 1 1/2 tsp. chopped fresh dill or 1/2 tsp. dried
  • 1/4 tsp. ground mace
  • 1/4 tsp. ground pepper

Directions

Arrange salmon in an 8-inch-square baking dish. Top with green onions,wine,dill,mace and pepper. Cover and chill 45 minutes,turning once. Remove from ice box and let stand 20 minutes to warm slightly. Bake uncovered at 350 degrees for 35 minutes, or until fish is cooked through.

Grilled Salmon Steaks

Ingredients

  • 4 Salmon Steaks (Cut 3/4 inch thick)
  • 4 Tbsp’s Olive Oil
  • Salt and Pepper
  • 1 1/2 Tbsp Parsley
  • 1 Lemon
  • 1 Clove Fresh Garlic

Directions

Get medium plastic bowl and place two tbsp’s olive oil on bottom. Add salt pepper,1/2 the parsley, 1/2 garlic. Place two streaks in the bowl and stir then around a bit in the oil, then flip over. Place the other two steaks on top of these and add the rest of the spice to the top of the steaks. Squeeze the lemon over all the steaks cover and let marinate in fridge for 30 minutes. Heat your grill to medium high, brush with a little oil and lay the steaks down. Let sear nicely and flip at around 5-7 minutes or when nicley marked. cooking time total should be around 12-15 minutes.

Maple-Glazed Roasted Salmon

Ingredients

  • 1/4 cup grated peeled fresh ginger
  • 1/4 cup rice vinegar or white wine vinegar
  • 1/4 cup maple syrup
  • 1 (2 1/2-pound) salmon fillet
  • 6 shallots – halved lengthwise
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons maple syrup – divided
  • Chopped parsley (optional)

Directions

Combine first 3 ingredients in bottom of a large platter. Add fish, skin side up, to ginger mixture. Cover and marinate in refrigerator 20 minutes. Remove fish from marinade; pat dry with paper towel to remove excess marinade.
Preheat oven to 450º.

Place a baking sheet in oven 5 minutes. Place shallots and fish, skin side down, on baking sheet; sprinkle with salt and pepper. Brush fish with 1 tablespoon syrup. Bake at 450º for 10 minutes. Brush with 1 tablespoon syrup; bake an additional 7 minutes or until fish flakes easily when tested with a fork. Sprinkle with parsley, if desired.

Mustard Crusted Salmon

Ingredients

  • 4 salmon pieces about 1/2 lb each
  • 1/4 cup finely minced garlic
  • 3 tablespoons butter or margarine
  • 3/4 cup whole-grain Dijon mustard
  • 1/2 cup dry white wine
  • Lemon wedges

Directions

Start this recipe by cleaning and rinsing fish; pat dry. Place the 4 pieces, skin down, on an oiled broiler pan. In a deep well frying pan add the garlic and butter and stir over medium heat until soft. With a spoon butter remove the butter from the pan (leaving the garlic)and drizzle it over salmon fillets. Broil the salmon for 2 minutes with medium-high heat. In a seperate bowl, mix mustard and wine with sauteed garlic. Remove pan from oven. Spoon mustard mixture evenly over fillets. Return the fish to the oven and continue to broil until the crust is golden brown.

Salmon Salsa

Ingredients

  • 1 lb. salmon fillets
  • 1 cup canned black beans – drained
  • 1 cup canned white navy beans – drained
  • 3/4 cup chopped tomatoes
  • 1/4 cup chopped red onions
  • 1/2 cup chopped green bell peppers
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp. minced garlic
  • 1/4 cup balsamic vinegar
  • 2 tbsp lemon juice

Directions

In a small bowl combine the beans, peppers, tomatoes, onions, and cilantro. Mix together the vinegar, lemon juice, garlic and pour over the bean mixture, toss once more. Barbecue the salmon until the fish flakes easy when touched with a fork. Serve the fish over the bean salsa and enjoy.

Branchala Bay Salmon Steamed In Banana Leaves

Ingredients

  • 3 large garlic cloves
  • 1 to 2 small fresh serrano chiles
  • 1/2 cup grated fresh coconut
  • 1 cup fresh cilantro sprigs
  • 1/2 cup fresh mint leaves
  • 1/4 cup fresh lime or lemon juice
  • 1/4 cup water
  • 1 teaspoon ground cumin
  • 1/2 teaspoon coarse salt
  • 6 untreated fresh or thawed frozen banana leaves
  • six 5-ounce pieces salmon or haddock fillet with skin

Directions

If using banana leaves, cut away ribs and in a large bowl of hot water soften leaves 1 minute to help keep them from splitting. Cut six 8-inch squares from leaves. On a work surface arrange 1 leaf square and pat dry. Spread 1 teaspoon herb sauce down middle of square to equal length of a piece of fish and arrange piece, skin side down, on sauce. Spread 1 tablespoon sauce over piece. Fold top and bottom edges of leaf over piece and fold sides of leaf over piece, enclosing it. Arrange packet, seam sides down, in a bamboo steamer or on a large steamer rack. Make 5 more packets in same manner and arrange in steamer or on rack. Steam packets over boiling water, covered, until fish is just cooked through, about 8 minutes. Serve fish immediately.

Cinnamon-Apricot Glazed Salmon

Ingredients

  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon minced peeled fresh ginger
  • 2 (3-inch) cinnamon sticks
  • 1 (12-ounce) can apricot nectar
  • 4 (6-ounce) salmon fillets (about 1 inch thick)

Directions

Combine the first 4 ingredients in a saucepan, and bring to a boil. Reduce heat, and simmer mixture until reduced to 3/4 cup (about 30 minutes). Strain the apricot mixture through a sieve over a bowl, and discard solids.
Preheat broiler. Place salmon fillets on a broiler pan lined with foil; broil 5 minutes. Brush fish with 1/4 cup apricot mixture. Broil for 3 minutes or until lightly browned and fish flakes easily when tested with a fork. Serve the fish with the remaining apricot mixture.

Smoked Salmon

Ingredients

  • Salmon fillets cut into 5 inch chunks
  • Coarse salt
  • Brown Sugar
  • Lemon Pepper Seasoning

Directions

Place them on a cookie sheet and coat them generously with a 50/50 mixture of coarse salt and brown sugar. Let them stand uncovered for up to 8 hrs Lightly rinse and place on grill rack or grill-type frying pan. Let stand again for 3-5 hrs with a fan blowing on racks. Sprinkle on lemon, lemon pepper, and teryaki glaze (optional) and place fillets on smoker racks and smoke for 7-9 hrs.

Barbecue Roasted Salmon

Ingredients

  • 1/4 cup pineapple juice
  • 2 tablespoons fresh lemon juice
  • 4 (6-ounce) salmon fillets
  • 2 tablespoons brown sugar
  • 4 teaspoons chili powder
  • 2 teaspoons grated lemon rind
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • Cooking spray
  • Lemon wedges (optional)

Directions

Combine first 3 ingredients in a zip-top plastic bag; seal and marinate in refrigerator 1 hour, turning occasionally.
Preheat oven to 400º.

Remove fish from bag; discard marinade. Combine sugar and next 5 ingredients (sugar through cinnamon) in a bowl. Rub over fish; place in an 11 x 7-inch baking dish coated with cooking spray. Bake at 400º for 12 minutes or until fish flakes easily when tested with a fork. Serve with lemon, if desired.

Guido’s Sauteed Salmon with Whiskey Sauce

Ingredients

  • 1 tbsp. butter
  • 1 shallot minced
  • 1 (12 oz) salmon fellet or 2 (6 oz) fillets
  • Salt
  • pepper
  • 1/4 cup irish whiskey
  • 1 tsp. apple cider vinegar
  • 1 tbsp. minced fresh tarragon
  • 1/4 whipped cream
  • lime wedges

Directions

Melt butter in medium skillet. Add shallot and saute 2 to 3 minutes. Season salmon with salt and pepper to taste. Saute salmon 3 to 4 minutes per side. Remove the plate (salmon won’t be completely cooked). Add whiskey, vinegar and tarragon to skillet and simmer 1 minute. Add cream. Season with salt and pepper. Return salmon to skillet, cover and cook 1 to 2 minutes per side. Divide fillet in half. Arrange half on each of 2 plates.
Top with sauce and serve with lime wedges on the side.
