Ingredients

* 1 c fresh parmesan cheese; grated
* 1/2 c flour
* 1/4 ts seasoned salt
* 1/2 ts black pepper
* 1 ts paprika
* 1 egg; beaten
* 1/2 c milk

* 1/4 c butter; melted
* 1 clove garlic; crushed
* 1 paprika and black pepper

Directions

Mix well first 5 ingredients. Separately, mix well egg and milk. Dip fish in egg mixture; dredge in flour mixture. Put fish in greased 9×13-inch baking dish. Saute garlic in butter for 2-3 minutes; drizzle over fish; sprinkle with paprika and pepper; bake at 350 degrees for 40 minutes or until fish flakes.

Beer Catfish

Ingredients

* 2 c self-rising flour
* 1 c beer; (your favorite brand)
* 1 garlic powder; to taste
* 1 salt and pepper; to taste
* 4 3-5 oz. catfish fillets; cut
* 1 vegetable oil; for frying

Directions

Combine 1 cup flour, beer, garlic salt, salt and pepper in a bowl. Mix well. Dip catfish strips in remaining flour and then in batter. Fry in hot oil in a deep-fryer or skillet until golden brown. Drain on absorbent towels. Serve hot.

Serve with your favorite sauce.

Ingredients

* 2 lb catfish fillets
* 1 ts salt
* 1 c all-purpose flour
* 1/4 ts red pepper
* 1 ts lemon rind
* grated
* 1/2 c butter
* 1/4 c pecans
* chopped
* 1 tb lemon juice
* 1 tb worcestershire sauce

Directions

Make pecan sauce by combining 1/4 C butter, chopped pecans, lemon juice and Worcestershire sauce and blend well. Combine flour, salt, pepper, lemon rind. Roll fillets in mixture, coating well. Melt 1/4 C butter in large skillet. Brown fillets over medium heat until light brown; turn once to brown both sides. Place fillets in well-greased 12X8X2 baking dish. Sprinkle pecan butter sauce over fillets. Sprinkle with additional chopped pecans if desires. Bake uncovered at 350 degrees for 12 minutes or until fish flakes easily when tested with a fork.

Beer Batter Fried Sardines And Lime

Ingredients

* 1/2 cup beer (not dark)
* 1/2 teaspoon salt
* 1/2 cup all-purpose flour
* two 3 3/4-ounce cans brisling sardines
* 1 lime
* 4 cups vegetable oil

Directions

In a 3-quart saucepan heat oil over moderately high heat until a deep-fat thermometer registers 375¡F. Working in batches of about 8 and holding sardines at head end to avoid breaking, dredge fish in batter to coat completely, dragging lightly against side of bowl to remove excess, and fry, stirring, until golden, 2 to 3 minutes. With a slotted spoon transfer sardines as fried to paper towels to drain. Fry lime wedges in oil until they begin to turn golden, about 30 seconds, and transfer to paper towels to drain. Serve sardines with lime.

Other Notes

Frying the lime wedges gives them a pleasing golden color and enables the juice to squirt out with the slightest pressure.

* 2 lbs. of catfish fillets
* 1 c. flour
* 1/2 c. corn meal
* 1 1/2 tsp. seasoned salt

Directions

Thaw catfish if frozen. Cut Catfish into pieces approximately 1 1/2 x 1 1/4 inches. In a large bowl sift together flour, corn meal, seasoned salt, baking powder & lemon pepper. Add eggs and milk; blend into a smooth batter. Stir in pecans or almonds. Dip Catfish into batter. Let excess batter drip off and place on was paper. Fry in deep-fat, 375 degree for 3 to 5 minutes until golden brown and catfish flakes easily when tested with a fork. Drain on absorbent paper. Serve with Zippy Cream ÔN’ Pickle Sauce

Directions

In medium bowl, combine fish, tomatoes, avocado, onions and olives. Add White Wine Vinaigrette with Chardonnay; toss. Chill 1 hour. Remove from refrigerator and toss with lettuce.

* 1 1/2 pounds catfish fillets – cut in 4 pieces
* 3/4 cup Lawry’s Lemon Pepper Marinade with Lemon Juice
* 1/4 cup dry bread crumbs
* 1 tablespoon Lawry’s Seasoned Salt
* 1 teaspoon Lawry’s Lemon Pepper
* 1/2 teaspoon dried dill Paprika
* 4 lemon slices (garnish)

Directions

In resealable plastic bag, combine catfish fillets and Lemon Pepper Marinade with Lemon Juice; seal bag. Marinate 1 hour in refrigerator. In pie plate, combine bread crumbs, Seasoned Salt, Lemon Pepper and dill. Remove fish from marinade; shake off excess liquid. Dredge fish in bread crumb mixture. Place in greased 12x8x2-inch baking dish. Sprinkle lightly with paprika. Bake, uncovered, in 350 degrees F oven 25 to 30 minutes or until fish just begins to flake.

Grilled Lemon Pepper Salad

Directions

Clean and prepare 3 large catfish fillets and season generously with lemon pepper and black pepper. Place the fillets on a clean grill sprayed with pam or another oil to prevent sticking. Grill the fillets until they are firm and cooked through.

1. cut the fillets into strips and then into bite size pieces

2. prepare a large salad with onions,cucumbers, bellpeppers and any ingredients you prefer in a salad.

3. Add the catfish pieces to the salad and sprinkle with black pepper.

* Mix bread crumbs and cajun seasoning. * Heat cast iron skillet over medium heat while melting butter. * Use care that the butter does not burn while heating. * Pat fillets dry. Dip fillets in egg then into bread crumb mixture. Place in heated skillet. * Adjust heat so the breading browns and does not burn while cooking the fillets through. * Remove from pan and immediately lightly salt then drain on either paper towels or brown paper bag.

Otik’s Hot Cajun Catfish Creole

* 6 Good Size Catfish Filets
* 2 Crushed Jalepenos
* 1/4 cup tabasco
* salt and pepper
* One lemon
* 2 tbsp. Worchestershire sauce
* 1 egg
* 1 tsp. cayenne pepper powder

Directions

Coddle egg first. Add egg to mixing bowl with worch. sauce, cayenne pepper, dash paprika, tabasco, salt and pepper and mix rapidly. Place catfish in bowl and thoroughly baste. Place on baking sheet (covered with butter). Add rest of baste on top. Sprinkle crushed jalepenos on top. Bake at 350 for 20 minutes.

Lemon Pepper Baked Catfish

* 4 whole catfish (approx 1/2 pound each)
* Lemon pepper

Directions

Rub lemon pepper and dill into fish. Line casserole dish with aluminum foil and coat foil with cooking spray or shortening to to prevent sticking. Place fish into dish and apply a small amount of butter to each for added flavor. Bake at 375 for approximately 40 minutes (or until moist and flaky). Serve whole.

Bacon/Cheddar Stuffed Fish Fillets

* 8 large Fish Fillets
* 12 strips of bacon
* 4 jalapeno peppers
* cheddar cheese
* salt and pepper

Directions

Prepare 8 large fish fillets. Catfish is what I used in this recipe but any type of fish will work. The fillets need to be thick about the size of a large porkchop, around 1/2 to 1 inch. Butterfly the fillet like a porkchop and stuff with cheddar cheese,bacon, and jalapeno strips.

Secure the sides of the fish with toothpicks or string, the kind used when roasting a ham.

Glaze the fillets with butter so the top will brown and place the stuffed fillets into a baking dish or cast iron skillet and bake at 350 for about 12-15 minutes until golden brown.

Other Notes

Serve 2 fillets per person with a fresh green salad and ranch dressing or dressing of choice. A cold glass of white wine works very well with this dish.

Bullhead (catfish) Or Sucker Patties

* 2 lbs. filleted bullheads or other fish
* 1 large raw potato
* 1 small onion
* 1 large or 2 small eggs
* 2 tbsp. flour
* salt and pepper and seasoning
* partly freeze for grinding

Directions

Grind fillets corsley, grind potato and onion. Mix with remaining ingredients. Drop by tablespoon into 1/2 inch hot fat. Bacon fat is very good as it adds to the flavor. Fry until golden brown on both sides, or make in paties and dip in pancake flour.

Citrus Grilled Catfish Salad

* 4 catfish fillets
* pinapple juice
* orange juice
* honey
* salt and pepper
* 2 apples
* 3 oranges
* 2 peaches
* almonds
* lettuce
* ranch dressing
* 1/2 pinapple

Directions

In a mixing bowl
1/2 cup orange juice
1/2 cup pinapple juice
1/2 cup pure honey

Mix the juices and honey thoroughly and dip 4 large cleaned catfish fillets into the mixture.

Place the fillets on a grill and grill until cooked. glaze with honey and juice mixture while cooking, normally about 10-12 minutes.

Prepare a bowl with green salad leaves in the bottom.( these are for decoration, you can eat the lettuce if you choose to. chop the following fruits into bite size pieces and place in the salad peaches,oranges,pinapples.

Sprinkle almonds onto the salad. sprinkle with fresh pinapple juice and a little drizzle of honey.

Cut the now cooked fillets into bite size pieces and add to the salad. Add a dab of ranch dressing to the salad and enjoy.

Catfish with Zesty Orange Sauce

Directions

Prepare the sauce by combining all ingredients in a bowl. Brush catfish fillets with sauce mixture. Place fish on lightly greased broiler pan. Broil approximately 5 minutes, brushing with sauce. Turn and broil 5 minutes longer, continuing to baste or until fish is close to the point of flakiness.

Bacon can be prefried to remove grease. Fish can be boiled and flesh removed from bones before adding to pot. Eat with sliced, White “Store Bought Bread” (Good recipe with many types of fish)

Southern Fried w/Mustard

Directions

Make sure fillets are well trimmed and season with salt, pepper and garlic powder. Put in sealed bowl and store in the fridge for about an hour. Drain any liquid from the fillets and add the mustard. Mix until all fillets are evenly coated with mustard then dip in the meal and cook until golden brown.

Southern Fried Catfish

* 8 (5 to 6-ounce) Catfish Fillets

* Crab boil seasoning (Old Bay)
* 4 cups Flour
* 1 cup cornmeal

Directions

Heat a fryer or a deep pot halfway filled with oil to 350 degrees F. Sprinkle both sides of each catfish with salt and crab boil seasoning. In a separate bowl, combine the flour and the cornmeal. Dredge the catfish in the flour mixture and place in fryer. Deep fry for approximately 7 to 8 minutes until done. Drain on paper towels.

Honey Bourbon Dipping Sauce

* small bottle of bourbon
* pure honey
* cinnamon
* brown sugar

Directions

Have all ingredients ready and pour bourbon into the bowl( use as much as you would like ) on average a good size serving for a few will take 8 oz of bourbon. Then add a tbsp or cinnamon ( i usually just wing it and pour cinnamon in ) add a handful of brown sugar and then add honey to the consistency you prefer. This sauce can be made thinner if needed by adding a little water or adding more bourbon depending on how much bourbon you prefer.

Heat the mixture and continue to stir while it is being heated. The sauce is great when its warm and it also makes one heck of a glaze when grilling.

Other Notes

Other types of alcohol can be substituted for the bourbon if you wish. For a tart tast try this recipe with tequilla.

Pepporcorn Ranch /Cheese injected Fillets

* pepporn corn ranch dressing
* cheese sauce or velveeta cheese

Directions

Clean and prepare 8 large catfish fillets. season with salt and pepper lightly.

1.melt cheese of choice, velveeta cheese works very well.

2. Inject mixture of cheese and peppercorn ranch dressing into the fish fillets.

3. spray the grill or skillet with pam or butter, whichever you choose

4. Cook the fillet until done, usually about 10-15 minutes.

Place the fillets on a nice bed of fresh lettuce and bellpepper slices. Top the fillets with fresh thin slices tomatoes.

* 6 catfish fillets
* tortillas
* bellpeppers
* onions
* sour cream
* shredded cheese
* taco seasoning
* guacamole
* peppercorn ranch dressing

Directions

Season Catfish fillets with taco seasoning, black pepper, and salt.

1. cut the fillets into strips
2. cut bellpeppers and onions into strips
3. Put the peppers,onions, and fish strips onto a hot grill for about 10-12 minutes
4. Add tortillas to the grill to brown
5. layer hot tortilla with sour cream, guacamole, and cheese 6. Add catfish strips along with peppercorn ranch dressing and hot sauce. Cover in cheese.

Other Notes

Prepare a large pot of refried beans. Pour beans into a serving bowl and scoop out the center of the beans and fill with sourcream, cheese, and ranch dressing. Drizzle the beans with hot sauce and more cheese. A nice cold glass of ice tea works very well with this meal. Something different, but worth the effort

Cajun Injected Catfish

Ingredients

* 8 catfish fillets
* cajun marinade
* salt
* pepper
* oregano
* 6 eggs
* 2-3 jalapeno peppers
* corn meal
* peanut oil

Directions

Prepare 8 average size catfish fillets. Clean the fillets and make sure they are free of bones. First use a pre purchased marinade or create your own. Inject a generous protion of marinade into the fillets to seal in the cajun flavor. Rub the fillets with black pepper for a little more kick and flavor.

2. Crack the 6 eggs and beat the until smooth.

3. Cut the 2-3 jalapeno peppers very finely and mix into the eggs.

4. Add pepper,salt, and oregano to the egg and jalapeno mixture and stir.

5. Cover the fillets with the mixture and dip into corn meal coating the fillets completely.

6.Prepare your oil in a cast iron skillet or fish fryer if you have one available. 300-350 degrees works the best.

7. Fry the fish fillets until golden brown, to make sure the fillets are cooked completely.

Other Notes

Server the fillets with tarter sauce or plain, the wonderful cajun and jalapeno flavors will fill you mouth. A side dish of fries and a side salad work very well.

Fried Catfish Casserole

* Catfish fillets (enough to cover flat 2 quart casserole)
* enough milk to cover fish
* 1 stick butter or oleo
* 1 small bell pepper
* chopped
* 2 cans shrimp soup
* 1 small can sliced mushrooms
* juice of 1 lemon
* 1/2 cup sherry
* salt and pepper to taste
* 2 dashes Worcestershire sauce

Directions

Soak fish in milk 2 to 3 hours. Dip fish in flour. Brown in butter. Put into dish. Brown pepper and onions in butter until limp. Add shrimp soup, mushrooms and 1/2 mushroom juice, lemon juice, shrimp and season to taste. Pour over fillets and bake at 350¡F for 30 to 40 minutes.

Bake or steam catfish. Remove from bones and flake. Mix all ingredients together. Shape into balls. Deep fry in hot fat at 350 degrees F until golden brown and crisp. Drain well.

Directions

Place fish fillets in broiling pan. Season with salt and pepper. Broil 4″ from heat until fish flakes easily to touch of fork. Set aside. Combine tomato puree, mustard, onion flakes and hot pepper sauce in sauce pan. Simmer 10 minutes until thickened. Spread over toast. Cover with fish fillets and top with pickle slices.

7. Thoroughly cover fillets the breading.
